A marine ingredient in the stockpot
Sa sung lives beneath the sand and is often dried before use. Quảng Ninh Newspaper reports it is used to flavour broth in northern Vietnam; in some places it is grilled as a dish of its own. In Vân Đồn, it is also used in fish sauce. Local reporting records one producer beginning a sa sung version in 2014. That is one producer’s story, not the story of every maker in the region.
Protecting the resource alongside production
Prolonged wild harvesting can put pressure on the resource. A 2025 provincial report describes research into breeding and commercial sa sung farming, intended to develop seed stock and reduce reliance on wild capture. It is work in progress, not proof that every product on sale now comes from farms. Check the label, origin, and storage information; if a seller says it is farmed, ask where the producer documents that claim.
